What you have is probably OK. The datasheet for the Hall sensor you linked to doesn't say anything about the signals being unusually sensitive. The only thing it mentions relevant to this issue is that the internal impedance is 8 kΩ max. That's not particularly high. I'd be more worried about the effects of cryogenic temperatures if that's where you intend to use these devices (it seems that's what these devices are intended for). That includes carefully considering how thermocouple effects are cancelled, that material can take the temperatures, differential coefficients of expansion, etc. You might want to take readings at opposite excitation currents, for example, and use that to cancel out some effects.
